Orange Chocolate Muffins

Orange Chocolate Muffins

Makes 12 Muffins

Ingredients

  • 1 & 3/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 mashed banana
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 tsp vanilla
  • 1/4 cup milk (any kind)
  • 2 tsp Cointreau (or orange extract)
  • zest of 2 oranges
  • 1 cup mini chocolate chips
  • For Glaze: juice of 2 oranges
  • For Glaze: 1/2 cup powdered sugar, sifted

Directions

  1. Preheat oven to 325 degrees and spray muffin tin with cooking spray
  2. Whisk first four ingredients, set aside
  3. Use a stand mixer or a handheld mixer and cream the banana, brown and white sugar and butter
  4. To the wet ingredients, add the eggs, vanilla, milk, Cointreau and zest, mixing after each addition
  5. Add dry ingredients to the wet and mix until just combined
  6. Stir in chocolate chips
  7. Use muffin/ice cream scoop and add slightly overfull scoops for each muffin
  8. Bake for 25-25 minutes
  9. Let cool for a few minutes in the tray and then transfer to a wire rack
  10. Drizzle glaze over the top of each muffin and let cool completely
