If you’re like me, you like to make a bit of a last-minute decision when it comes to Thanksgiving. Now, if you’re hosting, I’m sure you are well ahead of me and have your feast all planned out but I still might be able to help with a last-minute side dish or simple dessert for your non-pie eating guests! I have never had the pleasure/stress of hosting so I tend to just bring a side dish and here are a few easy options that work well for a small crowd. This is also a roundup of the recipes I’ve featured so far this fall! Each of these recipes is easy and none of them require too many ingredients so they are all still very feasible before Thursday!
For a seasonal salad, Try my Maple Chicken Salad minus the chicken since there will be enough poultry on the table!
For a simple side, make my 5-Minute, 5-Ingredient Lemon Honey Vinaigrette over roasted carrots.
For a sweet treat that’s not a pie, bake my Pumpkin Dark Chocolate Oat Bars.
And for a vegetarian-friendly (and make-ahead friendly) main dish or hearty side, prepare my Farro, Butternut Squash & Brussels Sprouts. Of course, leave out the sausage or replace with a veggie sausage to make it vegetarian and sprinkle in some dried cranberries to make it more festive.
